Mexican Chicken

Ingredients :

 

  • 2 large Chicken fillets (breast) cut into strips
  • 2 tablespoons Olive oil
  • 1 Onion finely chopped
  • 1 Garlic clove smashed
  • 1 teaspoon Paprika powder
  • 1 teaspoon of Cumin powder
  • 1 Red Pepper cut into trips
  • 1 Green Pepper cut into trips
  • 1 Yellow Pepper cut into trips
  • 1 Orange Pepper cut into trips
  • 1 grated Carrot
  • ½ cup Tomato Juice
  • Tabasco sauce
  • Finely chopped fresh Coriander
  • Salt 7 Pepper

 

 Method :

 

Add the olive oil into a non-stick frying pan and fry the chicken together with the onions, Add the garlic, paprika and cumin and mix well. Add peppers and carrot to the chicken and leave the vegetables to cook for 3-5 minutes. As soon as the vegetables are cooked add salt, pepper and a dash of tabasco sauce. Add the tomato juice and leave to simmer and cook until the sauce has thickened. Add chopped coriander and serve.
