In a pan of boiling water add the vegetable cube and cook the Melissa Orzo Pasta (Kritharaki) as per instructions shown on packet.
The Pasta Melissa should be cooked“Al Dente” – strain and leave to one side.
Wash and clean the mushrooms and take off the stems. Then cut the mushrooms into slices.
In a big non-stick frying pan melt the butter on a medium heat and sauté the finely chopped onions together with the garlic until soft.
Add the mushrooms and leave to cook well until all the juices from the mushrooms have been absorbed.
Add the wine to the mushrooms and leave to simmer for about 2-3 minutes.
Add the Orzo Pasta (Klitharaki) and mix with the mushrooms.
Add the fresh cream, parmesan cheese, salt and pepper and mix well until all the ingredients bind together.
Finally add the chopped parsley and stir, serve with a sprinkle of parmesan cheese and freshly ground pepper.
