Traditional Cypriot Olive Pie

Ingredients :

 

  • 2 Cups of Black Olives cut into slices(whithout their pits)
  • 1 Cup of Fresh Orange Juice
  • ½ Cup olive Oil
  • 1 Cup finely chopped Onion
  • ½ Cup finely chopped fresh Mint
  • 1 Cup finely chopped Coriander
  • 4 Cups of All Purposes Flour
  • 2 Teaspoons Baking Powder
  • Pinch of Sugar
  • 1 Teaspoon of Brandy
  • Sesame seeds

 

 Method :

 

Pre heat oven at 180 C. In a bowl mix together the olives, coriander, mint, onion, brandy and sugar and put to one side. In a seperate bowl add the flour, baking powder and olive oil and mix with hands until the mixture has a soft fluid texture, then add the orange juice and continue mixing with hands until the mixture has a soft dough consistency. Take the olive mixture and add this to your dough and continue mixing until all ingredients have combined together. Oil and gently flour a medium sized rectangular baking tin and put the mixture into it. Lightly sprinkle with sesame seeds and bake in the oven for approximately 35-40 minutes until golden brown.
