    Recently I became a dad and it gave me the boost to create one of my best cocktails and definitely one of the most important! '#Itsaboy' symbolizes a new beginning and new dreams. Contains Farin Lacte!Put the apple in the shaker and push it until it takes all its perfumes out. Add the rest of the ingredients, shake, and duplicate, since it contains apple and raw paste. Then serve!

    Sotiris Savvides was born and raised in Limassol, Cyprus but was never bound by his origins. After acquiring his diploma in Culinary school and becoming a Chef he discovered his love of mixing ingredients ley elsewhere.

  • Chocolate cake with espresso aroma

    Step 1: In a bowl, mingle the flour, the baking powder, the baking soda and the salt and leave it aside. Step 2: In another bowl mingle the espresso coffee, the liquid vanilla and the yoghurt.

  • Chocolate Mousse

    Cut the chocolate into small pieces and melt in bain marie. When the chocolate is thoroughly melted take off the heat and leave to one side. Whisk the egg whites either by hand or with a mixer until they form a meringue - soft like peaks.

    Cook the Melissa Spaghetti in a pan of boiling water with the vegetable cube as per instructions on packet.The Melissa Spaghetti should be cooked “Al Dente”. In a deep pan heat the olive oil and sauté the bacon strips until crispy.Strain the Melissa Spaghetti and add to the bacon and toss well (mix well).

    Mix together the onion, the minced meat, the pepper, the garlic, the coriander, the oregano and the soya sauce. Add salt and pepper and stir very well. Then, start shaping the beef burgers.

  • Double-colored panna cotta raspberry

    In a bowl you put some water and you pour the powdered gelatin in. Stir and leave it there for 5 minutes. Defrost the raspberries and mash them in blender. Then pass them through a thin strainer and put them in a small pot with the sugar.

    Cut the vegetables in big pieces and put them in a baking dish. Preheat the oven in 240 degrees and bake the vegetables for about 40-45 minutes.

    At first, smash all the pepper grains with a blender. Then batter the fillets in the white eggs and then in the peppers so that all the fillet sides are covered with them.

    Put all the ingredients in a deep bowl, stir very well and leave them to stay there for about 30 minutes so that their taste and flavors can be mixed together and give you the desired result.

  • Light Fluffy Vanilla Sponge Cake

    Pre-heat oven at 180o C. In a bowl place the flour with the baking powder and leave to one side. Cream together in the mixer the Margarine, Butter and Sugar.  Add one egg and mix for about 3 minutes then add the remaining egg mixing for another 3 minutes.

  • Mexican Chicken

    Add the olive oil into a non-stick frying pan and fry the chicken together with the onions, Add the garlic, paprika and cumin and mix well. Add peppers and carrot to the chicken and leave the vegetables to cook for 3-5 minutes.

  • Mushroom Orzo Risotto (Kritharoto)

    In a pan of boiling water add the vegetable cube and cook the MELISSA Orzo Pasta (Klitharaki) as per instructions shown on packet. The Pasta Melissa should be cooked“Al Dente” – strain and leave to one side.

  • Mussels in white sauce and garlic

    In a fry pan, boil up the olive oil and brown the onion and the garlic. Then, add the mussels and bake for about 5 minutes. Add the white wine.

  • Noodles with chicken (chow mein)

    Boil the noodles in well salted and well boiled water and strain them. Slightly oil them and mix them up. In a small saucepan put all the ingredients for the sauce apart from the corn flour. 

  • Pancetta with apple puree

    Inscribe the skin of pancetta with a sharp knife. Then add the coriander, the onion and the garlic and put some salt and pepper..

  • Pavlova with strawberries

    Add in the mixer bowl the egg whites and the crystal sugar. Start the eggs whisk in medium speed for about 15 minutes until it gets fluffy. In the meantime, you can sift the powdered sugar. 

  • Penne with Tomato Sauce and Olives

    Heat olive oil in a deep pan and saute the finely chopped onions until soft. Add Melissa finely chopped tomatoes. Add a pinch of sugar, pepper and salt and stir the tomato sause and leave to simmer and thichen until coocked.

  • Rack of lamb with risotto and Madeira wine sauce

    Put some olive oil in a fry pan and brown sauté the rack of lamb. Add salt and pepper and leave it take a rouge color. Continue the baking in a preheated oven at 180 degrees for 12-15 minutes.
